Chocolate and Cream Cheese Brownie

This absolutely yummy brownies are made with chocolate and cream cheese. Such a fantastic treats for any occasion.

Note: Remember to cover the top surface with a foil halfway through the baking process. This will help and prevent the top surface from burning and becoming crusty.

How to Bake Chocolate and Cream Cheese Brownie

INSTRUCTIONS

Preheat the oven to 170°C.

Brush a 9 inch rectangular baking pan with butter. Line the bottom and sides with parchment paper leaving a 2 inch over hang.

In a bowl, mix together the flour, cocoa powder, baking powder and salt and then set it aside.

In a double boiler, melt the butter and chocolate stirring occasionally for 3 minutes until it becomes smooth. Remove the bowl from the pan and let it cool for 5 minutes.

Mix in 1 cup of sugar into chocolate mixture to combine. Slowly add in the 3 eggs one at a time until blended.

Mix in the flour mixture from step 3, until all ingredients are incorporated. Be careful not to over mix.

TO PREPARE THE CREAM CHEESE MIXTURE - whisk cream cheese with the remaining sugar until smooth and then add in the remaining egg until just combined.

Spoon the chocolate batter and cream cheese mixture alternately over the base of lined baking pan. Use the tip of a spatula and make a swirl motion to create a marble effect.

Bake in the oven for 60 to 90 minutes until a skewer inserted comes out with only a few moist crumbs attached. Leave it to cool in the pan for 30 minutes.

Using the over hanging parchment paper lift the brownies out of the pan and transfer to a rack and let it cool completely. Use a damp serrated knife to cut into squares and serve.
